The sales-per-day figure is a mean across every kind of food-service establishment and is revenue, not margin.

What the labor costs
According to the Bureau of Labor Statistics' Occupational Employment and Wage Statistics program (bls.gov), heating, air conditioning, and refrigeration mechanics and installers earned a mean of $31.14 an hour and $64,780 a year in May 2025, with 409,670 employed. The BLS Occupational Outlook Handbook puts the median at $61,010 and projects employment to grow 11% from 2025 to 2035, much faster than the average for all occupations, with about 40,600 openings a year, mostly from replacing workers who leave. Home appliance repairers, the closer proxy for cooking-equipment work, earn a mean $26.94 an hour. According to the Census Bureau's County Business Patterns (census.gov), the commercial and industrial machinery repair trade comprised 22,907 establishments in 2023.

The same calculator models a commercial dishwasher at 18 hours of operation a day, 365 days a year.

Repair did not stay cheap either: the index for commercial machinery repair and maintenance services rose from 135.6 to 237.405, up 75.1%. What this means: The repair-versus-replace math moved in repair's favor on the equipment side (a new reach-in costs nearly twice what it did in 2019) but the service side climbed almost as fast. The honest version of the argument is that both got expensive, and the difference is decided by the age of the unit and the code exposure of the failure, not by a rule of thumb.
Published repair cost ranges (residential guides)
No primary source publishes commercial per-repair prices. The only published ranges with a stated methodology are consumer cost guides, which are scoped to residential appliances and which we present as the floor a commercial quote sits above. According to Fixr's refrigerator repair cost guide (fixr.com), updated August 2025 and compiled "from a variety of pricing databases, licensed contractors, and industry experts," the national average repair runs $350 to $500, a compressor replacement $500 to $1,000, sealed-system work $800 to $1,200, technician labor $100 to $250 an hour, and emergency service $110 to $300 an hour. Its freezer guide is the only one with a walk-in-specific line: floor repair on walk-in freezers and coolers at $250 to $650.

Every commercial "repair tier" price list we found online was a repair shop's own quoting sheet with no methodology, so none appears here.
What a real commercial kitchen contract pays
The best public evidence of commercial pricing is an executed contract. According to the District of Columbia Public Schools' hot food equipment maintenance and repair contract signed in September 2025 (dcps.dc.gov), the contractor provides preventive maintenance, diagnosis, repair, and replacement for hot-side equipment and hood ventilation at 117 school kitchens serving nearly 50,000 students. Annual preventive maintenance for all 117 kitchens, including hood inspection and "all the manufacturer's suggested services," is priced at $29,016 for the base year, and the contract budgets 2,856 estimated technician labor hours a year for repairs plus a $15,000 materials line. Response is on site within four hours for routine calls, any hour of any day, and within one hour for emergencies.

What this means: A public agency with 117 kitchens pays about $248 a year per kitchen to have someone look at every hot-side unit before it fails, and still budgets a full three technician-days per kitchen of repair on top. That is the realistic shape of a maintenance budget, and it says preventive maintenance reduces breakdowns without eliminating them.
The code rules that put a clock on a failure
A failed cooler is a food-safety event before it is a repair ticket. According to the FDA Food Code (fda.gov), time/temperature control for safety food must be held at 41°F or below or 135°F or above, both priority provisions. Once food leaves temperature control it must be served or discarded within 4 hours, and anything in an unmarked container is discarded outright. Cooked food must cool from 135°F to 70°F within 2 hours and to 41°F within 6, which a walk-in that has lost capacity fails before it fails a holding check. The Code also requires equipment to be "maintained in a state of repair," with doors, seals, hinges, and fasteners "kept intact, tight, and adjusted in accordance with manufacturer's specifications," and sets the dish machine's sanitizing rinse at a minimum of 165°F or 180°F depending on the machine.

What this means: The cheapest repair in a kitchen, a walk-in door gasket, is also a code requirement, and the most expensive consequence of a refrigeration failure is not the compressor but the four-hour discard rule applied to everything inside. A dated photo of the thermometer and the gasket is the evidence that both were fine, which is why our restaurant self-audit checklist rates each equipment item on whether a photo can prove it.
How often holding equipment is actually out of compliance
FDA's own field data shows the failure is routine. According to FDA's 2017-2018 retail risk-factor technical report (fda.gov), covering 851 restaurants, "foods requiring refrigeration are held at proper temperature" was out of compliance in 79.8% of full-service restaurants and 62.2% of fast-food restaurants, and proper cooling failed in 68.9% and 58.8%. According to the Environmental Protection Agency's January 2026 fact sheet on leak repair under the American Innovation and Manufacturing Act (epa.gov), beginning January 1, 2026, owners, operators, and certified technicians must comply with leak-repair requirements for appliances holding 15 pounds or more of refrigerant containing an HFC or certain HFC substitutes, down from the 50-pound threshold under Clean Air Act Section 608. The leak-rate trigger is 20% for commercial refrigeration, leaks must be repaired within 30 days with initial and follow-up verification tests, and appliances holding 500 pounds or more must be leak-inspected quarterly until they pass four quarters in a row.
